When we first tried this coffee we experienced it as a melodic “Raga”. This coffee’s notes harmoniously blend, creating a flavourful symphony that leaves you wanting more.

About our water –

We’ve added a mineral concentrate so you can brew with calibrated water to unlock this coffee’s full potential.

Dosage: 3 ml per brew (240 ml in 200 ml out) of RO water (lower ppm is better).

When to add it: After brewing the coffee, shake and add 2 full pipette or measure 3 ml.

Quantity: Whole packet of coffee is enough to brew 12 coffees of 16 grams each.

The effect of this water: Magnesium ions in this profile open up the orange by sharpening the extraction of organic acids. Calcium ions keeps the mouthfeel like cacao butter and defines the rose note, Bicarbonate ions buffer & stabilise the extraction of sugar-browning compounds, helping preserve the caramel jaggery sweetness and allowing the aftertaste to linger clearly.

Filter Paper –

We’ve included a Sibarist Fast filter paper so you can brew the exact same coffee Edén used in the National Brewers Cup finals.

We chose the Sibarist Fast filter paper because it allows us to grind finer, thanks to its rapid drawdown rate—providing more surface area for higher extraction. This enables a shorter brew time while extracting only the essentials.

Recipe –

1:15 ratio with a total of four pours, 16 grams of coffee and 240 ml of water for a brew time of 2:30 seconds.

Water temperature: 86 degrees celsius, this protects the delicate aromatics and flavour notes allowing them to shine.

Grind size: Espresso 450 to 500 micron, for this size you must use Sibarist filter paper; if not go for a standard 700 to 800 micron, focus on having a 2:30 minute brew time.

First pour: 40 ml for 30 seconds (if Hario switch available use the switch on for 37 seconds)

Second pour: 106 ml 00:30 to 01:00

Third pour: 172 ml 01:00- to 01:30

Fourth pour: 240 ml 01:30 to 02:00

Key Tip: Grind to espresso fineness (otherwise it brews too fast). Outcome – expect enhanced clarity, transparency, and a cleaner cup.

Roast profile –

The total roast time is 7:10 minutes with a 10% development time ratio, designed to keep the structure light while opening up the natural sweetness and aromatics. This is what feels most beautiful about filter brewing: a gentle, transparent extraction that gives the coffee room to breathe, so both the brewer and drinker can taste it as it is. The ideal degassing period is 30 days.
